Ingredients
- 1 whole turkey
- 200g onions, chopped
- 180g cherry tomatoes
- 150g pumpkin, diced
- 200g baby potatoes
- 50g garlic cloves, minced
- 150g carrots, chopped
- Sprigs of rosemary
For the marinade
- 200g Kanz Balsamic Pomegranate
- 100g Kanz olive oil
- 15g Kanz fleur de sel
- 30g Kanz Middle Eastern Spices
- 8g black pepper
- 1 orange
Instructions
- Cut your vegetables.
- Make the marinade by mixing the Middle Eastern spices, salt, black pepper, olive oil, balsamic pomegranate reduction, minced garlic, and orange juice.
- Marinate the turkey for at least two hours - preferably overnight.
- Preheat your oven to 180°C.
- Stuff the turkey with orange slices, onion pieces, and sprigs of rosemary.
- Pinch together the thighs using a string or toothpicks.
- Place the mixed vegetables around the turkey.
- Cover with sauce and a few sprigs of rosemary.
- Cover with aluminum foil and cook for 2 hours and 30 minutes, removing the cover every once in a while to baste with the juices.
- After 2 hours of cooking, remove the aluminum foil and cook the last 30 minutes uncovered, until the skin is golden and shiny.
