The Canaanites and the Phoenicians, ancient inhabitants of modern Lebanon, played a major role in spreading the olive tree around the Mediterranean. Our green olives are picked early in the season to capture their vivid color and firmness. The olives are salted with Mediterranean coarse salt, then added to brine and preserved for the pantry. In Lebanon, no table is complete without a bowl of olives!
