Ingredients

  • 1 small pumpkin
  • 150g chopped onions
  • 40g garlic
  • 150g celery, chopped
  • 150g leek, chopped
  • 5g Kanz Chili Salt
  • 5g paprika
  • 5g turmeric
  • 5 sage leaves
  • 100g Kanz olive oil
  • 500ml vegetable stock

Instructions

  1. Cut and clean the insides of the pumpkin.
  2. Fill the pumpkin with onion, garlic, and sage.
  3. Season with turmeric, paprika, and Kanz Chili Salt.
  4. Drizzle with Kanz olive oil.
  5. Roast at 180°C for 35-40 minutes until soft.
  6. While roasting, in a pot, heat Kanz olive oil.
  7. Sauté leeks, celery, and sage in the pot.
  8. Once roasted, remove the skin from the pumpkin.
  9. Add the roasted pumpkin, garlic, and onions to the pot.
  10. Add vegetable stock.
  11. Season with turmeric, paprika, and Kanz Chili Salt.
  12. Blend using a hand blender until smooth.
  13. Simmer on the stove until heated.
  14. Cut the top off another pumpkin, clean the inside, and pour the soup into it for serving.
