Ingredients
- 1 small pumpkin
- 150g chopped onions
- 40g garlic
- 150g celery, chopped
- 150g leek, chopped
- 5g Kanz Chili Salt
- 5g paprika
- 5g turmeric
- 5 sage leaves
- 100g Kanz olive oil
- 500ml vegetable stock
Instructions
- Cut and clean the insides of the pumpkin.
- Fill the pumpkin with onion, garlic, and sage.
- Season with turmeric, paprika, and Kanz Chili Salt.
- Drizzle with Kanz olive oil.
- Roast at 180°C for 35-40 minutes until soft.
- While roasting, in a pot, heat Kanz olive oil.
- Sauté leeks, celery, and sage in the pot.
- Once roasted, remove the skin from the pumpkin.
- Add the roasted pumpkin, garlic, and onions to the pot.
- Add vegetable stock.
- Season with turmeric, paprika, and Kanz Chili Salt.
- Blend using a hand blender until smooth.
- Simmer on the stove until heated.
- Cut the top off another pumpkin, clean the inside, and pour the soup into it for serving.
