Description

To upgrade and preserve eggplants, the Lebanese culinary heritage adopts the Makdous method, from the Arabic verb “Kadassa”, to pile over. One of the Lebanese Mouneh star products, the Makdous Batenjen consists of stuffing small-sized boiled aubergine with walnuts, red pepper, and garlic, and preserve them in olive oil. This tradition has been transmitted through generations in the breadbasket of Lebanon, the Beqaa plains, especially by the women of al-Qa’, in the district of Baalbek.
