To preserve eggplants, the Makdous method was adopted in the Middle East. Eggplant Makdous consists of baby eggplants stuffed with walnuts, red pepper, and garlic, preserved in olive oil. This tradition has been transmitted through generations by the women of al-Qaa. Our Makdous is skillfully cured in organic olive oil, and is best paired with flatbread, Labneh, or Hummus.
