To preserve eggplants, the “Makdous” method was adopted in the Middle East. Eggplant Makdous consists of baby eggplants stuffed with walnuts, red pepper, and garlic, preserved in oil. This tradition has been transmitted through generations by Lebanese women. Our Makdous is skillfully cured in oil, and is best paired with flatbread, Labneh, or Hummus.
