Jallab is one of the oldest Middle Eastern refresh

Jallab is one of the oldest Middle Eastern refreshing syrups. As the name suggests in Persian, (Gul: rose, Ab: Water), it was originally a rose water-scented syrup. With time, the recipe developed into a more sophisticated refreshing fruit syrup made out of molasses.

Mehshi Selek Katee with an exceptional Kanz twist:

Ingredients

1 fresh bunch of Selek (30 leaves)
Boiling water (to blanch the leaves)
1 cup rice washed and drained
2 medium tomatoes, peeled and finely chopped
1 small onion, finely chopped
½ cup parsley, finely chopped
¼ cup fresh mint, finely chopped
¼ cup Kanz Extra Virgin Olive Oil
½ cup Kanz Balsamic Pomegranate
½ teaspoon ground cinnamon
½ teaspoon ground allspice
½ teaspoon black pepper
1 teaspoon Kanz coarse salt
Juice of 1 lemon

On the side, prepare:
3 garlic cloves, sliced
Juice of 1 lemon
2 tablespoons Kanz Extra Virgin Olive Oil
Water

Directions:

Wash the leaves, cut the stems, and bring a pot of water to a boil. Blanch the leaves for about 30 seconds to soften them. Remove and drain.

In a bowl, mix the rice, chopped tomatoes, onion, parsley, mint, olive oil, cinnamon, allspice, black pepper, salt, and lemon juice.

Start rolling!
Place a small spoonful of the filling at the base of each leaf.
Fold in the sides and roll tightly.
Line the bottom of a pot with leafs and sliced potatoes to prevent sticking.
Stack the stuffed leaves in perfect layers.
Scatter the sliced garlic over the rolls, drizzle with olive oil and lemon juice, and then add enough water to just cover the rolls.
Put a plate over the rolls to avoid floating. Cover, and cook on low heat for about 40-45 minutes until the rice is fully cooked.
Let them cool before serving, and add the remaining cup of lemon.
